Lamb Kofta Kebab Recipe!

This week we bring you The Flavor Chef rendition of lamb kofta kebabs. This dish is Middle Eastern in origin and features ground lamb seasoned with Mediterranean spices of coriander and cumin. We have also added fresh mint and fresh parsley. The kofta is formed into the shape of an uncased smashed hot dog.

Lamb can tend to have a strong flavor for some people so you can substitute with 50% beef and the strong flavor of the lamb will be reduced. But for lamb lovers, use 100% lamb to achieve excellent results. Grass fed beef and lamb are now wildly available and highly recommended. Lamb Kofta Kebabs

2 lbs grass fed ground lamb 1 onion, minced
1 head garlic, peeled and minced ¼ cup The Flavor Chef Organic Grass Fed & Grass Finished Beef Bone Broth
coconut oil, for saute ½ cup parsley, chopped
½ cup mint, chopped ½ to 1 tsp dried dill (to taste)
½ to 1 tsp granulated onion (to taste) ½ to 1 tsp granulated garlic (to taste)
½ to 1 tsp cayenne pepper (to taste) ½ to 1 tsp coriander (to taste)
½ to 1 tsp cumin (to taste) sea salt (to taste)
black pepper (to taste) skewers

INSTRUCTIONS:

Sauté the onions and garlic in coconut oil until the onions begin to carmelize. Then, deglaze the pan withThe Flavor Chef Organic Grass Fed & Grass Finished Beef Bone Broth and remove the natural caramel. Allow the onions and garlic to cool. Next, combine all the ingredients - for the spices, start off with ½ teaspoon of each. Before forming into kebabs, cook a small sample to taste and adjust the seasonings. Once the seasoning is set to your taste, form the kebabs into your preferred size and skewer the patties. Sear each in a pan or on a flat grill. Cook through in the pan or finish them in a hot oven.

TZATZIKI SAUCE (if desired):

You can make a simple tzatziki sauce using goat yogurt, cucumbers, lemon or lime juice, fresh garlic, salt, pepper, mint, parsley, dill, or any combination of these. Combine the ingredients and chill.

KAFTA MEATBALLS IN BROTH:

Sauté one onion and some garlic in a pan and get a nice carmelized color. Add The Flavor Chef Organic Grass Fed & Grass Finished Beef Bone Broth, or substitute The Flavor Chef Organic Chicken Bone Broth, bring to a simmer and then reduce. Add fresh herbs to taste. Add cooked lamb meatballs and simmer for a few minutes. Serve with picks or small forks.
