This marinade combines some nice flavors to create a delicious end product. Chef Lance recommends against long marinades as you tend to lose the meat's amazing flavor. He suggests as little as an hour for expensive cuts like prime rib, filet mignon, New York strip, and top sirloin. For cuts like flank, tri-tip, or London broil, you can marinate for 3 to 5 hours. With the availability of quality grass fed beef, his preference is rib eye or sirloin, both for taste, tenderness, and fat content. You can make the marinade and refrigerate for up to 2 weeks so, use what you need and save the rest. Remember, it does not take a lot of marinade to produce fantastic flavor!

|½ cup tamari, wheat-free & low-sodium||½ cup balsamic vinegar|
|½ cup Worcestershire sauce||½ cup red wine|
|¼ cup toasted sesame oil||3 oz fresh ginger root, finely diced|
|½ large onion, finely chopped||1 head garlic, cloves only, finely chopped|
|1 tbsp black pepper||¼ cup honey|
|½ tsp cayenne or several shakes of hot sauce (optional if spice sensitive)|
|2 tbsp coconut oil (or fat of choice)||1 onion, julienne slices|
|3 cloves garlic, minced||¼ cup of the marinade|
|1 cup The Flavor Chef Beef Bone Broth|
Combine all ingredients in a glass jar and shake vigorously.
Using an appropriate amount of marinade, marinate steaks for at least 1-3 hours prior to grilling, depending on the cut, and up to a maximum of 6 hours. Marinating longer than 6 hours will cause the strong flavors to dominate your meat. Then, cook the steaks to the desired tenderness over a hot grill.
Chef's Tip: It is recommended to use top quality grass fed beef and cook steaks to medium rare.
In a sauté pan, add the coconut oil (or fat of choice). Next, add the onion and garlic and cook until soft and beginning to brown (caramelizing). Now, deglaze the pan with your marinade and then add The Flavor Chef Beef Bone Broth. Bring the sauce to a simmer and cook for 5-7 minutes allowing the sauce to completely infuse and thicken. Since our broth is so gelatinous, this will make for a luscious, nutritious sauce and provide a naturally thick glaze!
