Pan Braised Romanesco with Leeks Recipe!

Sometimes referred to as romanesco broccoli or romanesco cauliflower, it is from the same family and has a similar taste to broccoli, with a slightly earthier profile. It has an unmistakably beautiful appearance with a naturally crunchy texture. It makes for a wonderful addition to a veggie platter, or as a steamed dish, or roasted on a sheet pan.

In this recipe, we use a pan braising technique using our Organic Chicken Bone Broth to develop the flavor and boost the nutritional component. The results are amazing...especially with the added benefits of fresh leeks, garlic, and herbs!

Pan Braised Romanesco with Leeks Recipe

2 tbsp coconut oil, ghee, or tallow 1 head romanesco, cut into florets
1 big (or 2 small) leeks, washed, cut in ½" half moons 4 cloves garlic, minced or sliced
1 tsp sea salt 2 tbsp nutritional yeast flakes
8-12 oz, Organic Chicken Bone Broth Basil, Parsley, Cilantro, Mint (your choice)
turmeric (optional) black pepper (optional)


INSTRUCTIONS:

NOTES: You can dice the core of the romanesco stem into 1" cubes and add to the recipe. Also, if adding the turmeric and black pepper for extra immune support, be aware that it will change the flavor profile.

In a large sauté pan with a cover, on medium to high heat, add your choice of fat. Then, add in the romanesco. Gently sauté for a few minutes to release the color. Add in the leeks and garlic. (By adding them later in the process, the leeks and garlic do not burn). Allow them to sweat for 3 to 4 minutes. Season with sea salt and optional turmeric and black pepper. Allow the flavors to bloom and continue to sauté. Now, add in the Organic Chicken Bone Broth (this will deglaze the pan) and quickly cover the pan. Allow the steam from the broth to gently cook the romanesco. After the broth has reduced and the romanesco is soft to the bite, gently toss with the nutritional yeast flakes. Turn off the heat and toss with any fresh herbs you want.
