Red Bell Pepper Soup Recipe

1 tbsp + 2 tsp ghee 6 cups TFC Organic Chicken Bone Broth
6 red bell peppers, seeded and chopped 2 carrots, peeled and chopped
1 large onion, chopped 2 ribs celery, chopped
4 cloves garlic, minced 2 tbsp fresh thyme, chopped, or 1 tbsp dried
1 tsp fresh turmeric, chopped, or 1 tbsp dried 1 pinch of ground red pepper
1 pinch of red-pepper flakes 1 tsp sea salt
½ tsp ground black pepper 2½ medium avocados, peeled and pitted


Heat the ghee in a large pot over medium-high heat. Stir in the bell peppers, carrots, onion, celery, and garlic and cook for about 10 minutes, stirring occasionally.

Stir in the broth, thyme, turmeric, bell pepper, red-pepper flakes, salt, and black pepper and bring to a boil. Immediately reduce the heat, cover, and simmer for about 15 minutes, or until the vegetables are very tender.

Remove from the heat and cool for 30 minutes.

Add the avocados to the mixture. Puree with a handheld immersion blender or in batches in a food processor or blender until very smooth.

Return to the pot and simmer for 5 to 10 minutes before serving.
