Savory Porridge with Tomatoes, Onions & Spinach Recipe!

This amazing dish is a perfect way to use bone broth and adds a savory punch to your usual breakfast (or lunch) routine. Porridge or, in this case, steel cut oats, is an excellent source of gluten-free deliciousness. The oats should be soaked the night before in salted, purified drinking water to insure maximum digestibility. Savory Porridge with Tomatoes, Onions & Spinach Recipe

1 tbsp coconut oil, ghee, or tallow 1 cup onions, small dice
4 cloves garlic, minced 1 cup cherry tomatoes, halved
1 cup cremini mushrooms, sliced 1 cup gluten-free steel cut oats, drained
3 cups, The Flavor Chef Organic Bone Broth(Chicken or Beef) 2 oz spinach leaves
1 tbsp nutritional yeast flakes ½ lemon, juiced
fresh parsley, minced sea salt, to taste
sheep's milk feta cheese, for topping (optional)


INSTRUCTIONS:

In a 1 quart sauce pot on medium to high heat, add the coconut oil, ghee, or tallow. Add the onions and sauté for 3 minutes. Add the minced garlic and the cremini mushrooms and cook for a few more minutes. Then, add the cherry tomatoes and stir. Season with sea salt.

Now, stir in your drained oats and cook for 1 minute. Add The Flavor Chef Organic Bone Broth, bring to a brief boil and reduce to a simmer. Simmer until the oats are tender, about 15 to 20 minutes. When the oats are tender, add the spinach, nutritional yeast flakes, lemon juice, and stir. When you are ready to serve, adjust the seasoning with sea salt or add more broth if it's too thick. Top with fresh parsley and optional feta cheese. Serve with your favorite hot sauce for an added kick.
