In keeping with our winter porridge theme, this week we give you a simple congee recipe. Congee is a Chinese rice porridge. While it is a breakfast staple, it is also a favorite comfort food suitable for any time of the day.
Congee has been used in Traditional Chinese Medicine for centuries, as has authentic bone broth, specifically to assist with digestive challenges. By combining the two in this simple recipe, we create a digestive powerhouse rich in naturally occurring collagen, amino acids, minerals and protein!
The simple congee makes a wonderful base that can be enhanced with traditional ingredients such as grated fresh ginger, gluten-free/wheat-free tamari, sesame oil, and/or coconut aminos. To make it into a full meal, you can add cooked meats, like shredded chicken or ground beef, a soft cooked egg, some well cooked vegetables, or some stimulating fresh herbs such as mint, basil, cilantro or parsley.

|2 cups long grain rice||8 oz cremini mushrooms, wiped with a wet towel|
|9 cups The Flavor Chef Organic Bone Broth (Chicken or Beef)||2 tsps sea salt|
|2 tbsp fresh ginger, finely chopped||2 to 3 tbsp coconut oil or ghee|
|chopped ginger, fresh scallions, gluten-free tamari, coconut amions, sesame oil|
|Optional Herbs (chopped):|
|parsley, cilantro, mint, basil|
In a large pot, combine the rice, mushrooms, bone broth, and sea salt. Bring to a very brief boil over high heat and then immediately reduce to medium-low heat. Gently simmer, uncovered, for about an hour or until the rice is soft and the broth is thickened into a porridge-like consistency. Stir the coconut oil or ghee into the congee. Add any optional toppings and/or herbs of choice and serve!
