|2 tbsp coconut oil||1 onion, diced|
|4 cloves garlic, minced||1 inch piece of ginger, grated|
|1 inch piece of turmeric root, grated||1 leek, cleaned and diced|
|4 cups spinach leaves||1 can coconut cream|
|sea salt, to taste||fresh black pepper, to taste|
|3 cups (1 package) The Flavor Chef Organic Chicken Bone Broth (more as needed)||fresh parsley (for garnish)|
In an 8 quart sauté pot, add the coconut oil. Then, add the onions, garlic, ginger, leek, and turmeric root. Allow this to sauté for 7 to 10 minutes until the mixture is beginning to brown and then add in your spinach or mixed greens. Season with salt and pepper. With a pair of tongs, turn the spinach and allow it to wilt thoroughly. Next, add in the Organic Chicken Bone Broth and bring the pot to a brief simmer. Then, use an immersion blender to purée the soup well. At this point, adjust the seasonings and the broth level. Add the can of coconut milk and purée a bit more. Again, taste and adjust the seasoning. Finally, garnish with fresh herbs, if desired, and serve.
